Spirit of Thailand, inspired by Chef Zachary’s time at the Wat Thai Temple in Tampa.

An ode to Thailand’s culinary soul, where flavors tell stories and tradition is celebrated with every bite.

This menu is a tribute to Thailand’s rich history, vibrant culture, and deep-rooted culinary traditions. Inspired by the wisdom and techniques passed down through generations, this dining experience honors the balance of flavors that define Thai cuisine.  

From fragrant curries and refreshing palate cleansers to delicate dumplings and decadent desserts, each dish is crafted with respect for authentic ingredients and techniques learned through immersive experiences. This dinner is about connection, storytelling, and the spirit of sharing a meal with warmth and generosity. 

Passed Appetizers  

Shumai – Thai Dumpling  

Steamed dumplings filled with a blend of shrimp and pork, served with a soy dipping sauce.  

Course 1

Kaffir Lime Fish Cake 

Fresh fish mixed with Thai spices and kaffir lime leaves, pan-seared and glazed with soy chili sauce.  

Course 2 

Yum Sia Glok Moo – Thai Sausage Salad  

Thai sausage tossed with fresh herbs and garden greens, topped with crisp papaya salad.  

Course 3 Palate Cleanser

Passion Fruit Ginger Sorbet

A refreshing sorbet with tropical passion fruit and a touch of spicy ginger.  

Course 4 Main Course 

Pumpkin & Duck Curry with Jasmine Rice

Roasted duck simmered in red curry with pumpkin and coconut milk, served with jasmine rice.  

Additional Vegetable Dish: Stir-fried Morning Glory (Pad Pak Boong)

Morning glory greens stir-fried with garlic, chilies, and a savory soy-based sauce.  

Course 5 Dessert 

Sticky Rice & Mango 

Sweet sticky rice infused with coconut milk, served with ripe mango and topped with black sesame seeds and coconut glaze.  

After-Dinner Treat 

Thai Tea Truffles 

Chocolate truffles infused with Thai tea, coconut cream, and condensed milk.
